How do you deal with legato/live orchestra ease of use

For CSS I use a script in Reaper to only move the MIDI on playback and to move it back when playback stops. You can download it in my signature

Damn good idea, actually. I was going to agree with the crowd and say two versions as that's what I do on the rare occasions that I get live players and a copyist, but I'm nowhere near as busy as the OP.
