Mock up Recommendation for newbie

Pick a piece by 1) a composer you like, 2) that has a good recording, and 3) that you can purchase the score. Create the mockup by following the score and use that to learn how to control your instruments and balance your template.

Any piece by John Williams (published by Hal Leonard) is good for this.... if you like John Williams!
 
If you're asking about the technical side of writing for samples and workflow then checkout Youtube videos of streams and tutorials like Daniel James, Dirk Elhert, Alex Moukala and Ashton Gleckman as a start
 
Just buy Verta's class on making mock-ups where he shows his piece made entirely of Kontakt factory samples he sold to Disney.

Love it's 15 seconds of music with more interesting development and orchestration than all these Black Panthers and Jokers and whatnot soundtracks. :grin: Listened to those 15 seconds way too much since buying the class.

Iirc that's a good advanced class but really not a "step by step how-to" that someone might expect based on your description.
