I also have both EW Symphonic Choirs and Hollywood Choirs. I like both; as you can probably hear, the sound is quite different.
The most useful thing to me about the new library is that its wordbuilder engine takes so much less work to get a basic track together. With the older library, you can get there, but it's very time consuming.
I know that you can never reproduce a really good choir, any more than you can reproduce a really good orchestra, but I like both these libraries.

From your experience, how would you compare both sound wise? Is there any truth to the opinion that the older one can go softer? And I take it the newer one doesn’t contain soloists?

"softer" -- not sure what you've heard about that one. Just noodling, you can make either choir quite soft.
I mostly use the new one these days. It is a little drier (not "dry" dry, like some people prefer), which I find works to bring out in a mix. I think you can hear that in the demos.
No soloists in the new one. The thing that shines for me is definitely its playback is more predictable and less fiddling is needed to put syllables where you want them.
Mind you, I work pretty fast so I'm not "engraving" the sound. But most of the criticism I've seen is -- I don't know what people have a problem with honestly. I use it all the time and it's fine. I'm using it in a cue right now.

I haven't used Voices of The Empire much yet, but I can vouch for Hollywood Choirs. I think it's a big step above Symphonic choirs in terms of the audio quality and playability. It replaced SC in my template except for when it comes to FX and shouts, which HC does not feature.
